Salted Chocolate Chunk Cookies by Lisa Clark

The cookie jar Lisa ClarkA while back Penguin dropped off The Cookie Jar book by Lisa Clark and with it came some sample cookies from the book, the salted chocolate chunk ones and guys… I have been craving this cookie ever since. I can’t explain to you how good it is. Seriously, it’s one of those cookies where once you’ve had it you’ll find it hard to want for anything else but it ever again. They are AMAZING! And yeah, totally sad I had to share with Fysh hahaha. Anyway, I asked if it would be okay to share a recipe with y’all and they said yes so… you’re welcome ;)

This recipe only makes 6 cookies. So you’re most likely going to want to double or quadruple the recipe if you can, you could make them smaller I guess but trust me, you’d rather make more ;)

The cookie jar Lisa Clark

You’ll need :

  • 125g butter at room temperature
  • 85g castor sugar
  • 125g brown sugar
  • 5ml vanilla essence
  • 1 egg, lightly beaten
  • 160g dark chocolate chopped
  • 50g almonds, roasted and chopped
  • 240g cake flour
  • 5ml bicarbonate of soda
  • 5ml sea-salt flakes
  1. Using a stand mixer or electric beater, beat the butter, sugars and vanilla essence for about 5 minutes until the mixture is pale and fluffy. Add the beaten egg and mix well to combine, then add the chopped chocolate and almonds.
  2. Sift the flour and bicarbonate of soda into a separate clean bowl. Gradually add the flour mixture to the butter mixture, being careful not to over-mix, and then stir in the sea salt. Cover the bowl with cling film and chill in the fridge for at least two hours.
  3. When the dough is firm, preheat the oven to 170°C and line the two baking trays with baking paper.
  4. Divide the dough into 6 equal portions and roll each into a ball with your hands. Gently press them into thick discs and place them on the lined baking trays, spaced 5 cm a part. You should get three cookies per tray.
  5. Bake for 15 minutes or until crisped and golden at the edges. Leave the cookies to cool on the trays for 2 minutes before transferring them, on the baking paper, to cool completely on wire racks.

Healthy cookies include : pumpkin seed and coconut biscuits | gluten free peanut butter cinnamon cookies and raw coconut trianglesSavoury cookies like : rosemary cornmeal crackers and maple bacon shortbreadHome-style cookies include : chocolate crinkle cookies | pumpkin oatmeal cookies | mosbeskuit and buttermilk rusks.  And last but not least some of the fancy biscuits include : blood orange cookies | caramel-filled whoopie pies and chocolate espresso cookies.

An awesome idea is to make a whole bunch of the other recipes in there as well and then you can sort them into pretty jars or boxes and gift them (well, those you don’t eat anyway!) that’s what I’m hoping to do come December if I can :)
