Fysh made me buy a packet of bananas a week or two ago under the guise that he now actually likes them (hahahaha) well he ate maybe two and then I found a packet of over ripe nanas in the fridge so thought well I’m sure as hell not letting them go to waste. I have flour and eggs I may as well turn them into something he’ll eat – BANANA BREAD! We had enough nanas to double the mix so I made one plain and then got creative for the other by adding cocoa and peanut butter… any guesses as to which he prefers?
Here’s the recipe because it came out PERFECT!
Preheat oven to 160 deg celcius
3 ripe bananas mashed
1 1/2 cups stone ground flour
1 cup sugar
1 teaspoon bicarbonate of soda
1 teaspoon salt
2 tablespoons cocoa
2 table spoons peanut butter
1 packet chocolate chips
Moer everything into a bowl and mix it. Then put it in a greased bread tin and pop it in the oven for about an hour, or till the knife comes out clean ( I had two tins in at the same time so it took about an hour and a half).
